Colors Cosmos is brewed as Kimoto Kioke Junmai using Kairyo Shinko at Not disclosed. Steamed rice, koji and water are built into a fermenting mash so starch conversion and alcoholic fermentation proceed together. The Junmai designation means it is made without added distilled alcohol. The Kimoto label identifies a traditional starter method in which the rice and koji are worked to encourage lactic-acid development.
