Biodynamically farmed fruit from the Granton estate is joined by a smaller Cradoc component. Hand-picked berries are sorted, mostly destemmed and wild fermented, with some whole bunches before basket pressing and oak maturation.
造り・製法
Grantonのバイオダイナミック農法による自社畑果実に、Cradocの果実を少量加えます。手摘みして選果し、大部分を除梗して野生酵母発酵。一部に全房を使い、バスケットプレス後に樽で育成します。
WHY IT IS DIFFERENT
Primavera is the estate's earlier, more fruit-led Pinot Noir rather than a single-block reserve. Two southern Tasmanian sources and moderate whole-bunch use create fragrance and immediacy without losing savoury detail.
